Potatoes are a fun and easy crop to grow, but since they grow underground, how do you know when they are ready to harvest?
You can actually harvest your potatoes at a couple of different times throughout the summer.
The earlier harvest will be smaller, thinner skinned potatoes often called “new potatoes.” These don’t keep well, so they should be eaten soon after harvesting.
The later harvest will be your full-sized potatoes that you can store for the cooler months.
In many areas of the U.S., potato digging time is upon us – or nearly so!
