Ready to preserve the summer bounty for the winter months? Tomatoes are one of the easiest things to can – and are quite safe, when done properly.

Modern varieties of tomatoes can be sweeter and less acidic, so they are considered borderline when it comes to canning safety. To be safe, add lemon juice or citric acid to your jars before filling.

You may not be able to eat all those delicious tomatoes that you grew right now, but if you preserve them for later through canning, you can enjoy your garden’s bounty all winter long!
